Today I made some delicious short rib tacos!! These were super easy.
Ingredients:
– 2 lbs beef short ribs
– chopped lettuce
– Salsa
– Queso fresco
– tortillas
– bbq sauce
– SPG (or your favorite rub)
– beef stock
Directions:
– Set up your smoker for 250F
– Grill/smoke ribs until you hit the stall (~160F)
– Wrap in pan
– Grill until probe tender (~210F)
– Shred
– Make your tacos!
