I just purchased a pressure canner and wanted to share my first video using it. I plan to make tons of delicious food that I can store in my pantry/basement that will last a long time.
USDA states canned foods last about a year, but veteran canners say it lasts longer than that.
I’m using a Presto 16qt pressure canner that is only $77 on amazon. You can find it here: https://amzn.to/2VcfOm0
This recipe is:
~4lbs beef stew meat
~5 carrots, cut up
1 yellow onion, diced
6-7 potatoes
5-6 stalks celery
1 cup beef broth
~2 cups water
Mix the water/broth together in a sauce pan, heat it up and add seasonings (pepper, salt, etc..)
Add the meat / veg into the jars meat first (raw).. then top off w/ the broth leaving a 1″ head space.
Run them in the canner at 10psi (check your altitude for correct psi) for 75 minutes.
Once they’re finished, let the canner sit while all of the pressure is escaping.
Let the jars sit 24hrs, then remove the lid rings, check for good seals, and store.
When you want to heat them up, you can drain the liquid into a sauce pan, add some flour to thicken it up, then pour the rest of the jar in and heat up.
