I just got myself a 22″ Weber Kettle and figured what’s better to break it in than a Brisket? It’s a 13lb hunk of meat, so at 225 it’d take roughly 15hrs if we’re thinking an hour and 15 minutes per pound. I decided to get it on the Weber as close to 1am as possible.
