I made some delicious bacon wrapped meatloaf balls today on the offset smoker. If you haven’t had these, I suggest you get to it! Here are the ingredients and rough instructions.

Ingredients:
– 2 pounds 80/20 ground beef
– 2 pounds pork sausage
– 1 cup goldfish crackers
– 8 oz. shredded mozzarella
– 4 oz. mozzarella pearls
– 1 package bacon
– 2 eggs
– Your favorite rub
– Your favorite BBQ sauce

Instructions:
– Set your smoker/grill to 250/275F ambient temperature
– Mix everything together (except the bacon)
– Wrap each meatball with at least 2 pieces of bacon
– Place them on there and monitor until they get to about 165F internal temp
– Let them rest 5-10 minutes
– Enjoy!!
