I made some delicious bone-in thighs today! It was about $7 for 10 thighs at the supermarket – they’ll easily last me 3 days!
I fired up the Vortex in my 26″ Weber Kettle and got the ambient temp up to about 350F. Added some cherry wood chunks and got those thighs on.
After about 50 minutes, they hit 175F internal temp and the skin was super crispy!
